Quite a Pair

Kind of like a mullet.  A breakfast mullet.  Business on the bottom, party on the top.  Or something.  Cornbread and eggs = the perfect pair!

Spicy Quiche Cornbread

 

Ingredients (for 3 servings):

 

  • 1 and 1/4 cup dry cornbread mix, which should then be prepared according to package directions (i.e. with all the egg, water, milk, oil, etc.)
  • 1/4 cup spicy Soy Chorizo (from Trader Joe’s)
  • 8 cherry tomatoes, sliced
  • 1 handful raw spinach, shredded
  • Dash of olive oil
  • 5 eggs 
  • 1/4 cup soy milk
  • Salt and Pepper to taste

Directions:

 

  • Preheat oven to 350 degrees.
  • Prepare the cornbread mix according to package directions.  Make enough mix for 1 1/4 cup dry mix.   Pour into a greased cast iron dish and bake for 15 minutes at 350.
  • In a hot pan, cook tomatoes, spinach, and olive oil until tomatoes begin to wilt. 
  • Combine veggies, eggs, soy milk, and salt and pepper in a small bowl.  Beat thoroughly.
  • Pour egg mix on top of cooked cornbread.
  • Put back in the oven and bake for 15 minutes at 350.  Increase temp to 400 degrees and bake for an additional 5 minutes.
  • Remove from oven and let stand for 5 minutes before slicing.
  • Enjoy!

I know there are Maggie lovers out there who will appreciate this update.

 

As you may remember, I was super concerned about how Maggie would react to the baby. Maggie was my first furbaby, and although she has some – errr – difficult characteristics (anxiety, neediness) that are a direct result of her rough childhood (we rescued her), I love her so much.  I knew she would be jealous and sad when the baby arrived.  And she was, despite my best efforts to give her tons of attention.  For the first five months, Maggie basically refused to look at Henry.  She acted like he didn’t exist – I think she was trying to will him away.  She would sit in the other room when we were on the couch – a huge deal since she’s so attached to me. 

 

Slowly but surely, Maggie decided she didn’t mind Henry.  And dare I say it… I think she decided she likes the little guy.  Another perfect pair!

What changed?  Ironically, Henry now fulfills Maggie’s need for attention.  He squeals when she comes close, and he likes to pet her, pull on her ears (something she’s always liked), and touch her tail.  And she laps it up.  It’s my attention to her times one million.  She’s officially codependent on Henry.  And it cracks me up.  I should’ve seen this coming!

 

They enjoy quiet time together, too.

Now… if I can just stop her from stealing his plush toys.

I’m glad Maggie and Henry are getting along well! And that quiche…. looks AMAZING! I haven’t used my cast iron skillet in a while (mainly because I don’t like cleaning it) but it’s totally coming out this weekend!

To clean my cast iron skillet….I immediately put hot water in it to help soak off the food and use one of those hard plastic scrapers (I think it’s Pampered Chef one) and scrape all the food off. Then before I put it away take a paper towel and put a little olive oil on it and rub it around in the skillet. Easy ;)

Oh…. this post makes me so happy, and those pictures are adorable.

Thank you for writing about Maggie and Henry! I’m a bit concerned about one of our dogs too being jealous when our baby arrives. She just craves attention. Now if only I can tell her that soon enough she’ll get more than she ever bargained for.

If you can figure out how to get her to stop stealing the stuffed toys please let me know!! I have two dogs and one of them is obsessed with my sons toys! I will sit at the closed toy box and sniff and whine because he’s desperate to get to them. For the most part I just don’t buy them for my son. The three of them share the dog’s toys, lol.

I didn’t grow up with animals and my husband had all sorts (snake, iguana, bird, multiple dogs) and we eventually got a dog together and I love him more than I could have imagined. I always stop when I see dogs, just as I do with babies. Those pictures of Henry and Maggie are adorable! Henry gets cuter everyday. I really love your blog and seeing you as a mom!

Adorable! I too love watching our chocolate lab interacting with our 2 girls. Our almost 2 year old loves chasing Rudy around and she gets big kisses from him everyday!

For us it is kind of the opposite regarding the plush toys. I cringe whenever my toddler picks up and plays with one of the dog’s ratty, dingy, old plush toys! Fortunately, our dog automatically knew to leave his plush toys alone, which I still have no idea how we got so lucky. But our son doesn’t understand why the dog’s super fun orage monkey isn’t HIS toy. Oh, the germs! It kills me!

ive been dying to hear this update. I have a 65lb black lab that is actually quite scared of new people and barks until she is comfortable, basically. once she warms up she is their BFF but babies I think freak her out a bit more because she doesnt understand them. Did you have ANY issues with the dogs getting mad or doing a low growl (you know the kind? no teeth bearing but a warning growl) when the bebe pulled too much or went after a dog bone or toy? thats my fear for when we have a bebe!

aww this is the cutest thing ever. I have a schnoodle and an almost 4 month old and my dog is also my baby. He’s starting to warm up to the baby and loves to run into his room after naps to get him with me. It’s seriously the cutest ever. I can’t wait until he realizes the baby is a kid (he loves kids) and they can play and cuddle. It’s awesome to see your babies (animals and humans) loving each other!!

So glad he and Maggie are hitting it off! I was evidently the same way when I was a baby. My parents were worried that the dog (a Schnauzer, not usually the best “kid” dog) would be jealous of me, but I just adored him and he was an older brother to me. I would clap for him, call him “G dog” (for “good dog”, one of my first phrases), and when I grew older we’d hang out together and cuddle. Dogs gotta love those opposable thumbs :)

Gosh, I hope this is how my doggy-son relationship ends up. My baby boy is 12 weeks old and my first fur baby (who is also a Dachshund) is not too fond of my little guy. My Doxie Recon is 7 1/2 years old. I thought for sure he’d be attached at the hip to the happy because of his personality. He’s a little lover and a protector. I thought he’d love Baby Michael. He doesn’t want anything to do with him. Like your situation, whenever we are together as a family say on the couch for instance, Recon does in his bed in the other room. He stays far away. Even when we call him, he doesn’t want to come to us. It’s depressing.

However, over the past week or so, I’ve been noticing Recon coming around a little more and more. He comes over now and sniffs the baby’s head and gives him a lick or two on the cheek. I really hope this is a start of a new relationship between the two of them. I want Recon involved in the baby’s life so bad…

He’s such a quirky dog. lol
