How are you guys doing? I’m in recovery mode from this weekend! My body isn’t sore anymore, but man – am I tired. I would love to curl up on the couch and watch back-to-back episodes of Parenthood all day. But alas – that must wait until the kiddo’s bedtime! He is much more interested in Thomas the Tank Engine… πŸ™‚

 

Anyway – I did get us out of the house for a trip to the gym (this was before the 1 PM sleepies hit!). I swam an awesome 1000 yards – I’ll have to post the workout for you tomorrow. It’s a good one and went by so quickly.

 

So after some quality (and quiet) block-building time, Henry and I set out to make this sandwich. He has just figured out that sandwiches are the COOLEST. THING. EVER. He’s also caught on that I eat sandwiches while he eats deconstructed bread and fillings, so now he REALLY wants to eat what I’m eating. He’s still mastering the two-handed sandwich hold, and most of the time, the fillings fall out on the floor (except peanut butter – but that comes with it’s own mess!). So while his version of My Favorite Vegetarian Sandwich didn’t include all the fillings (he just had cheese), this was doubly fun to make and eat together.

 

Here’s what you’ll need to make My Favorite Vegetarian Sandwich:

 

Start with toasted Udi’s bread.

Add a smear of yellow mustard.

Add two thin slices of grilled zucchini.

Add a slice of grilled squash.

Add grilled mushrooms.

Add a big, thick slice of cheddar cheese.

Add bread and butter pickles (I HAVE A SERIOUS PICKLE PROBLEM RIGHT NOW – #clichéd)

Top with another slice of toasted Udi’s bread.

Maybe this sounds like a funny combo, but I swear – it’s really, really good. The mustard and pickles are key, so don’t skip those!

 

I’ve been thinking a lot about my healthy eating journey, and one thing that I’ve concluded is that it’s so much easier to eat healthy on a daily (or weekly!) basis when you really love what you’re eating. When I first cleaned up my diet, I had a serious misconception that healthy eating was boring or restrictive or bland. But it’s really not – it’s about finding delicious combinations, trying new foods, and re-envisioning your favorite dishes.

    That looks awesome! It kind of reminds me of the veggie sandwich at Portillo’s, which is amazing, but not GF and certainly not nearly as healthy.

    My favorite sandwich is turkey with provolone cheese, honey mustard, and apple slices. I make it on my panini press, but it’s good made like a grilled cheese as well. I recently found out that I have a sensitivity to apples, so I can’t eat it anymore, and I am definitely mourning this loss. πŸ™‚ Someone has to make one so I can live vicariously!

      I have a sensitivity to apples too BUT I cannn eat them cooked.. Apple pie is ok but sliced is not haha so if I want something with apples I will lightly stew them first! Wanted to pass on some love because no one should go with out apples!

    Ooo- I used to make similar sandwiches with grilled zucchini, squash and onions, and I used mustard, cheese, and sauerkraut for dressing. Mmm.

    I love cheese and pickles on a sandwich, something about the salty and the creamy together. Lately, I’ve been doing hummus with tomato and cucumber or avocado with tomato and pickles

    My favorite sandwich combo of all time is avocado+tomato+cucumbers+lettuce+mayo on toasted bread. It’s fabulous.

    If we’re going with vegetarian my favortie would be grilled zucchini, grilled eggplants, and grilled roasted red pepper with goat cheese smeared on your bread of choice. I’d definitely recommend toasted bread or popping it on the panini press. We’ve used Udi’s before and it’s delicious.

    I have been on a total pickle kick my second pregnancy too. My coworkers made so much fun of me at the beginning because there were days when I felt like I literally needed every pickle ever made in my mouth immediately. Pickle and cheese sandwiches have always been a favorite of mine!! If you’re into fancy pickles, check out Pogue Mahone – I get them at the farmer’s market when I visit my mom in Austin and OMG. Soooo amazing!

    I love pickles, I can’t even imagine how obsessed I’ll be when I’m pregnant! I don’t really eat bread anymore, but I’d have to vote for some kind of grilled cheese… probably with bacon! Or maybe a caprese panini. And now I’m hungry πŸ˜‰

    What’s your favorite kind of Udi’s bread? I’ve been GF for about three months but still can’t quite forget what regular bread tastes and feels like. I’ve tried a few kinds but am still looking for the perfect loaf. Suggestions? πŸ™‚
