Craving – Fulfilled?

My favorite restaurant in all of Charlotte is Luna’s Living Kitchen.  They “specialize in the art of living foods, serving organic, plant-based cuisine, smoothies and cold-pressed juices.”  There’s no other restaurants like it in Charlotte, and it’s so good.

My favorite thing to order at Luna’s is the quinoa veggie burger wrapped up in a collard green ‘bun.’  It’s so fresh and tasty, thanks to the addition of hummus and pickled relish.

I’ve been thinking about this sandwich non-stop and decided to try my hand at something similar at home… You see, the reason that Luna’s is so good is that every time I eat there, I think, “I could never make this at home.”  Each dish includes a million unique ingredients and flavors. 

 

But then I remembered that I have some collard greens in our garden, just waiting to be picked!

Oh, we also have some tomatoes coming up.  Finally!

 

Anyway – here was ‘my version’ of my Luna’s dish.  I used Emily’s black bean burgers as the base.

While totally delicious, it was not the same.  Not the same at all!  Hah.  No surprise there…

 

So in addition to attempting to fulfill a pregnancy-related food craving, I spent the morning catching up on work, going on a torturous walk/run, tidying up my kitchen (I have a new personal goal in life – never let dishes sit in the sink… Hahahahahhahaha) and shipping out a fun package.

My friend is having a baby shower this weekend – she’s having a little girl.  My friend is one of the classiest dressers that I know, so I felt a lot of pressure when picking out baby clothes… I went with neutral colors.  You like?  Heck, I’d wear all of those outfits if they came in my size…

    I LOVE Luna’s. I go there at least 2x each time I’m visiting the bf in Charlotte. Their desserts are unreal.. and all gluten free 😀

    I’m always saying “if we just did a little cleaning every day, our house would always be clean, let’s really do it this time” yeahhhhhhhhh lol.

    My Monday has been a rollercoaster. My office moved two weeks ago and most of it wasn’t ready, so I was put in a random room to work for two weeks and today I actually got moved to my cube. Fun times.

    super cute clothes for your friend! I love that you chose non-pink colours. As someone who had a little girl 2 months ago, we get given soooo much pink! other colours are nice too 🙂
    Today I am going to try and meet up with some mama friends and their babes this afternoon and enjoy the sunshine!

    Those baby outfits are really cute. Today, I’m blasting music, and cleaning up the entire house (it looks so empty now! Lol) because my husbands 2 sisters are coming for a week’s visit on Sunday. I’m so excited!!!

    Now, if I could only get the decorating part down pat. It just looks like a mumbo-jumbo of furniture around here. Nothing’s consistent. Oh well.

    Your outfit choices for the baby are beautiful. I, too would wear those outfits if they were in my size.

    Not many cravings lately except for ice cold watermelon, cherries, and string cheese. I never ate dairy pre pregnancy, so that’s super weird for me. I’m rolling with it.
    I love Luna’s and always try to hit it up when we visit CLT, whether as a trip to ikea or pit stop on the way to visit family. I’ve heard you should be careful consuming sprouts while pregnant because of possible bacteria. Thoughts? Just curious because I would love to add them to sandwiches, but am kinda worried I’ll be the one case that gets sick.
    Those baby outfits are so cute! Love the little swimsuit. Can that come in my size? 😉

      I just don’t worry about it, to be honest. I feel like it’s one of those super small risk things and I rarely eat them. But I totally understand playing it 1000% safe.

    I still haven’t been to Luna’s Living Kitchen. I’ve been wanting to try it, and now I really want to go sample that meal. Yum!!

    I’m no good at trying to replicate restaurant meals. My dad is a master at it though! No idea how he does it!

    That middle outfit needs to come in my size…adorable! I love recreating my favorite restaurant meals at home. It rarely comes out the same, but usually satisfies the craving for a little while.

    I don’t have low blood sugar, but do try to find ways to sneak in snacks every three hours or so. I just like to eat! 🙂

    I’m on vacation today at Hilton Head Island, S.C., with my husband. We’ve been here three days now and are just soaking up some relaxation! I’ve been satisfying my seafood wants and trying out new restaurants. We’ll be hitting somewhere that’s new to both of us tonight. Ah, eating…my favorite part of vacay!
