They could be even smaller and thus even more painful when I step on them… And Henry really loves sticking them together and pulling them apart.  I guess we’re going to call it a wash.

So I was hoping that this post would include a very delicious enchilada recipe, but no dice.  Actually, it was still delicious, but it wasn’t share-worthy.

 

Over the weekend, we went to a Mexican restaurant, and I inhaled spinach and mushroom corn enchiladas with this creamy sauce.  I was attempting to mimic the dish, but with a vegan ‘cheese’ sauce.

The sauce included the following, all whirled up in the blender:

 

3/4 cup soy milk

1 cup nutritional yeast

1 can Garbanzo beans

Chili powder

Salt

I poured the sauce over six spinach, onion, and mushroom rolled corn soft tacos and baked it for 15 minutes at 350.  Unfortunately, the sauce ended up hardening – not the creamy, dreamy mess that I was going for.  But still really good!

Here’s the kicker, though – the sauce is INCREDIBLE unbaked.  You could put it over stir-fries or even on a sandwich.  So there – this recipe attempt isn’t for naught.  Just make the sauce and enjoy.

 

My StitchFix Obsession

 

By popular demand, here’s my StitchFix post!  I have been using StichFix for three months, but I wasn’t going to blog about it because it seems like almost every blogger has!  But I mentioned it in a post and the comments exploded with requests for a peek into my fixes – so here’s that post.

If you have not heard about StitchFix yet, it’s an online personal shopping service.  I am SO glad that other bloggers convinced me to sign up.  This is the thing about StitchFix:  the style and the sizing is SPOT ON.  The concept wouldn’t work if their styling and sizing wasn’t so perfect.  I have only tried on one item out of fifteen that didn’t fit me perfectly, and I think there’s only been two or three items that I felt blah about.  It’s actually pretty amazing (I don’t know how they do it!).

 

When you sign up for the service, you fill out a style survey, a sizing chart, and you describe your daily activities a bit.  So you can personalize your fixes to your lifestyle (for example, office or SAHM).  You pay a $20 styling fee, which can be applied to your purchase.  And then you get your fix in the mail.  You get five pieces, a styling guide, and a return package so you can easily send back whatever you don’t want.  Your card is automatically changed for whatever you keep, and then you go back online and fill out a survey to indicate why you kept and returned the items.  Each fix is custom tailored with your feedback, so the fixes get better and better over time.

You can set your prices low or high, depending on your budget. I’ve actually noticed the prices getting cheaper over my last three fixes, but that could just be a coincidence. Most items are about $50.  If you buy all the items in one fix, you get a 25% discount.  Granted, this is way more than I would ever spend in a store for an item.  But what I love about StitchFix (and why I’m willing to pay more) is that 1) it’s really exciting to get a fix in the mail; 2) I receive items that I probably wouldn’t pick up at the store; and 3) I don’t have to go to the store, which is practically impossible with a small child.  But mostly, I like it because it’s fun!

Raglan Striped Knit Shirt

This shirt is super cute – I don’t think this photo does it justice, actually.  It’s higher in the front than the back, and it’s very soft and comfy.  It’s $48.  For me, it was a KEEP.

 

Maxi Skirt

This is a good example of why I love StitchFix.  I would’ve never picked up this skirt in a store, but I really liked it when I tried it on.  I need to figure out how to style it better, because an ill-fitting tucked-in pajama top isn’t cutting it.  Hah.  At $48, I decided to KEEP it.

 

Roll-Cuff Cotton Cargo Short

I liked these shorts a lot from the front, but I didn’t like the back.  I decided to RETURN them for several other reasons:  the price point was way too high ($68), and I already have some similar-colored shorts.

Ooooh I loved this shirt!  The material is super delicate and pretty.  It’s basically a glorified t-shirt, which is what I always request in my fixes because I live in tops like this.  I need something cute but functional when I’m chasing Henry around a playground!  At $44, I decided it was a KEEP.

 

Crossbody Bag with Zip Detail

I liked the look of this crossbody purse, but I’m just not very into purses these days.  Hello, diaper bag.  I have zero use for a small purse, so even though I thought the price was good ($48), I decided to RETURN it.

    So my husband (who is 36 and still loves legos BTW) said that when he was a child, his mother would lay out a large bed sheet and put all the legos on the sheet. Then when he was done playing, she’d gather up the sheet (with legos and all) and tie the sheet like a bag until he was ready to play again!

    I was pleasantly surprised by StitchFix! I liked that they sent me stuff I wouldn’t normally buy!

    But the real question is–what Alex and Ani bracelets do you have? I’m a little addicted to them!

    Have you tried the potato and chard enchiladas from Veganomicon? Sooooo good. I make the sauce all the time just to pour over beans (or eat with a spoon, whatevs).     We use a builders tray (that they mix cement in) to keep lego in, that way he can see his whole selection, it keeps it from being all over my floor and I can push it under the sofa or bed to keep it out of the way when not in use. The tray is also fab as sand or water pit and for huge messy projects involving large amounts of paint!

    I really love the maxi skirt and grey shirt! I tried stitch fix a few times and wasn’t such a fan of what I was getting. My first fix was probably best, but the items were just a bit too high priced, so I moved my price points down. I’m hoping to try it again sometime this year and try to pin more outfits and be al ittle more clear with the kind of style I’m looking for.

    Stitch Fix looks fun. I know my husband would hate it though because then I would buy new clothes every month. Ha!     I LOVE seeing what everyone gets in their Stitch Fixes — I’m just so nervous to try it! I am really, really bad at return things via mail, which is probably why I’m so nervous. I’d forget to return it and end up paying a bazillion dollars. 🙂

    Stitch Fix sure does look fun. Here’s the rub though…they only serve a select group of sizes. When I tried to sign up and put in my size I got a pop up message that they weren’t serving plus size women at this time. I know it is more expensive for them (and every clothing retailer in the world, apparently) to broaden their horizons – pun intended – but I sure am tired of Lane Bryant and Old Navy Plus (online only) being my only options. Maybe as the founder of Operation Beautiful you can help us bigger girls find our voice with companies like Stitch Fix?

      I just read an article today about the trials of plus size shopping inspired by a (positive) quote by Issac Mizarahi. (I know I spelled that wrong. Feeling too lazy to find the right spelling.) One thing that came up was that Modcloth recently expanded their plus size selections with very positive results. I adore Modcloth, have you looked there? Such fun stuff. I could spend so much money!!!

    On my fixes I specify clothes only, no accessories. I’m not much of an accessories girl, but I need help with the trendy stuff I’m too scared to try on in the store! And yes, the fit is always great for me. Haven’t returned anything yet.

    legos are the worst. My little brother would lay out a blanket and poor them all out on it and when he was done he’d wrap up the blanket and poor the legos back into the bin. I’d still step on them a lot.

    I feel like I am the only person who has EVER had a bad experience with stitch fix. I asked for something for a winter wedding and for a mountain bachelorette party and they sent me 3 black SLEEVELESS dresses (also it’s not a funeral) that all looked exactly the same, a purse when I asked for no accessories and then a tank top (yes again.. no sleeves). I was super bummed. Not using them again. I’m glad you had a better experience.

    Thanks for posting your Stitchfix! I love seeing what people get, but I’m a bargain shopper so I read the reviews and generally use it for inspiration. I saw an Olive and Oak (used frequently in Stitchfixes) shirt exactly like yours yesterday at TJM. Once in a while I think I should try one Fix, but haven’t pulled the trigger. I think it’s great for time-challenged, people who hate shopping or whose circumstances (moms of little ones) don’t allow.

    You are so cute. Love the stitch fix outfits….they are definitely not in my budget, but very convenient. 🙂
    The enchiladas sound delicious. A couple of thoughts about ways to get your sauce to stay creamy: Add earth balance or another kind of vegan fat source to keep the mixture soft; try tossing in 1/2 an avocado to the sauce (might be green, but avocado keeps things moist); you may also try subbing part cashew cream/cashew butter for the beans to a 50/50 ratio.
    I might give these a whirl this week. Love us some enchiladas here!

    ok i gotta say it. i just keep seeing this garbage all over the blogs. stitchfix is cheap, unflattering and i am so stunned that people post this stuff like it’s fashionable! you have a GREAT body and these clothes do nothing for you! you would look amazing in some structured and classic lines with a pop of color. when things fit properly, the outfit really shines! my closet might be small but i really value quality over quantity. i mix and match with what i have with pieces that will last the test of time because they are well made.

    I think those shorts look really good on you. But yeah, too pricy for shorts. I have thought about doing Stitchfix. I really like that they tell you how to match different pieces. I struggle with that.

    Thanks for sharing! I love seeing what Stitch Fix picked out for people, how they look on you, prices, etc. I haven’t tried yet as I’m really frugal, but I hate shopping because I feel like everything looks the same and that’s definitely not the case with SF clothes. How have you found the quality to be? I’m willing to pay for quality.

        Actually, all Stitch Fix clothes are brands that you could find in a department store. I’ve checked the tag inside shirts before to search for the brand so I could find more of it!
