Weekend Highlights

Henry opened his diaper drawer, took out a few, and then tried to put a diaper on his (very small) dolly.  It was adorable.

Then we diapered all his teddy bears. <3

 

Sunday food preppers – did you do it yet?!  I completed all my food prep for next week.  Wahoo!  Chopped fruit and raw veggies, roasted butternut squash, a ton of slow-cooked white beans, and baked sweet potatoes.  This will make cooking next week so much easier!

And I’ve been eating a lot of really delicious meals, like an omelet with pineapple…

Rice with sunflower seeds, cast iron tofu, and a salad…

Another arugula salad with beans and butternut squash (I tossed the squash in a mix of nutmeg and curry powder with olive oil before roasted at 375 degrees for 30 minutes – divine)…

And last, but not least, over-easy eggs with zucchini and the Husband’s excellent home fries!

I also did two great workouts.  Kristien and I ran 7.0  miles yesterday.  We were fast!  I love running with him because it pushes me to go a bit faster than I would otherwise.

It doesn’t hurt that he is usually pushing the stroller!  Smile

 

Today, I did this track workout. It’s like the original track workout but it’s much easier and can be done in less time.

    I’m so jealous that you can run outside right now! It’s been such an awful winter here that I have only been able to spend a significant amount of time (>5 minutes, hah) outside once since October and that was sledding with the nephews. Missing it so much! Random question: How is everyone adjusting without Pippa? Do you guys think you might rescue another cat?

      We miss Pippa so much 🙁 It’s so sad… I look at her little box of ashes all the time and just cry.

      We are going to adopt another one but I’m not sure when… I’m sure the right cat will present himself or herself soon 🙂

    Oh my goodness! Henry looks so old in that picture! How adorable that he diapered his stuffed animals!

    Congrats on the food prep. I definitely need to do that more often. Having lentils throughout the week last week was such a treat!

    The highlight of my weekend was having a really heart to heart with my husband and re-focusing some things in my life. I think sometimes we all need to re-look at things in our life, and I feel good about things to come!

    Haha, the diaper scenario is daily in our household. My daughter very quickly learned which drawer had diapers in it and since then, they have been secretly placed in all parts of our house. She has even started helping to put her own diapers on!

    Hooray for food prep!!! I came back from my long run, went directly to the kitchen, and prepped 6 breakfast sandwiches for the husband and I, his lunch for tomorrow, 4 lunches for me (quinoa, half-bag of frozen veggies, half a Dr. Praeger’s veggie burger, 4 T of Trader Joe’s light champagne vinagrette), a crap-ton of mashed sweet potatoes and hard boiled eggs for the little one, and started a curried chicken stew that will last for 1-2 dinners this week.

    My feet hurt, but I feel like a freaking rockstar! All that took less than 2 hours, and will save me SO much time and sanity later in the week 🙂

    I enjoyed a nice run and a yoga class this weekend. It felt great to move after a week under the weather. Looks like a lovely and delicious week!

    Squash is a perfect winter vegetable. Love your idea to throw sunflower seeds in with rice! The highlight of my weekend unfortunately has a visit to urgent care Friday night & an emergency room visit today. 🙁

    I have a sick husband, a teething 20 mos old and I am 37 weeks pregnant. The highlight of my weekend was going to the grocery store alone 🙁 But cuddles from my little man later will top that!

    Best part of my weekend was relaxing! It was soooo nice to do nothing Satuday but run, read and rest.

    I love doing food prep- but it does not happen often enough 🙂 I’ve been pretty good about at least making breakfasts for the week, and even that is a HUGE time saver!

    Caitlin, I know you have mentioned this before at some point, but can you let us know please approx how far 6 laps or so is. Was it 10laps = 1 mile? This looks like a fun workout that you could replicate on a treadmill for those of us without access to a track. Thx!

    I love your weekend highlights- and great job on the 7 miles!! Does Kirstien run often or is he able to randomly get up and knock out 7 miles in great time? lol That’s awesome. My highlight was watching the Grammys because I’m a huge Beyonce fan lol Ps- Henry video made my day this morning 🙂

    I’m sure you’ve already taken care of this, but be sure that dresser is fastened to the wall! With all the drawers open, most dressers can easily be pulled down by a little guy (or gal!)

    Hi Caitlin, I was wondering if you had seen this article by Amy Glass on stay at home moms/housewives? It is a quick read and would be interesting to hear your thoughts on it since you are both a stay at home AND work from home mom. I myself am a housewife (while working on my third degree) and Ms. Glass and her perspective on women really rattled me

      I think she’s just… mean. LOL I thought the article was very belittling of other people in general. I *get* her point but my reaction is, “How can you judge what is more important and more worthwhile?” Who is she to judge that making money or acquiring power is more important than being at home? If people are satisfied with their position in life, I don’t think anyone should judge them or frown on them.

    My 2 year old loves to diaper his stuffed animals too. 🙂 Such cuteness! When I used to work as a preschool teacher, I purchased preemie diapers for the kids to diaper the dolls with…so much easier for them than the larger diapers.
