Baked Cherry Oatmeal

It’s still so snowy out!  It’s rare for it to snow in Charlotte but even more unusual for the snow to stick to the ground.  It’s so lovely out.

I stayed up way past my bedtime last night to watch the new James Bond movie Skyfall.  SO good.  The movie had me on the edge of my seat the entire time, and I sure am glad that I already knew the ‘twist’ – I would’ve been gnawing away my fingernails!  Anyone else out there like to spoil movies and TV shows for themselves?  I spoiled the entire first season of The Walking Dead via Wikipedia when I started to watch the show; otherwise, I would’ve had a heart attack.

 

Anyway, I think the reason why James Bond is oh-so-popular is because we all want to imagine we’ve got a little Bond deep inside of us (TWSS).  I know that I pretended to be a super secret agent when I crept outside to let the dogs out at midnight.  Bond. Caitlin Bond.

I won’t keep this delicious recipe top secret!

 

Baked Cherry Oatmeal (based on Kath’s recipe)

 

Ingredients (for two servings):

 

  • 2 cups oatmeal
  • 1 teaspoon baking powder
  • Dash of salt
  • Dash of cinnamon
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 cup milk or milk alternative
  • 1 sliced banana
  • 1/4 cup sunflower seeds
  • 6 frozen cherries
  • 1/4 cup coconut
  • 2 tablespoons maple syrup or brown rice syrup

 

Directions:

 

  • Spray a 8-inch pan with cooking spray.  Preheat oven to 375.
  • Combine all ingredients except for coconut and maple syrup.  Pour mix into pan.
  • Top with coconut.
  • Bake for 20 minutes.
  • Remove and drizzle syrup on top.
  • Slice into two portions and serve.

My favorite part is the juxtaposition of the sweet (coconut, syrup), the tart (cherries), and the salty (sunflower seeds).  Yum.

 

In case you ever wonder, here’s how I find time to blog with a 8-month old baby.  I trap him in a seat and hand him a bunch of roasted broccoli.  That kid loves broccoli. He can put away an adult-sized portion.

    Broccoli for breakfast? That sounds more than okay to me! Haha…what a cutie. 😀

    I liked the new Bond movie too! So good. But I hate having spoilers even though I really, really, really want to know what happens before I actually find out. 😀

    We watched The World Is Not Enough and Die Another Day last night. (I’d already seen them several times but my flatmate hadn’t.) I have been reluctant to watch the new new Bond, since I am rather partial to Pierce Brosnan. 🙂 I guess I will have to get caught up.

    I thought Skyfall was really good, too. I think I’m going to have to try making this oatmeal. I really love cherries and cherry season is my favorite time of year. Do you think fresh cherries would work just as well?

    Yes, I spoil movies and TV shows for myself constantly! I hate suspense. It drives my husband crazy because if he has seen something and I haven’t I ask him a million questions about what happens. He can’t stand to have ANYTHING spoiled for him so he never tells me anything which in turn drives me crazy. Oh well, marriage is sacrifice. 😉

    BTW – per your recommendation I am reading the Handmaid’s Tale and it is SOOO good!

    I always “cheat” and know the endings of suspenseful movies. I barely made it through Argo in the theater and I knew the outcome! I’ll even skim through books so I know how they end. I need to know!

    This oatmeal sounds amazing. I have had it with cranberries but never cherries, I’ll have to try it out. How much snow did Charlotte get? It snowed all day in Raleigh but didn’t really stick to the roads.

    You’ve addressed on your blog the media’s influence on body image and eating disorders. I’m just curious what your take on social media and pro Ana twitter feeds and Instagram accounts where women post pictures of their unhealthy diet plans and unhealthy pictures of their emaciated bodies or pictures of other women as “thinspiration”? I recently came across quite a few and these women have 1,000 of followers, many of whom are easily influenced young girls who look up to these women ( often in their 20’s) as perfection and idols. If you haven’t seen them I’d look at the Instagram or twitter account of a 20 something girl who goes by skinnyconfessions. She’s inspired a cult following and it’s deeply disturbing and sad. I don’t mean to pick on her and there are many more, but hers seems to have one of the largest followings. She refers to the girls that aspire to be her as “minions”. Maybe you could address this phenomenon in a post?

    I love Bond movies, my mom is a huge fan and I grew up watching them all the time! I haven’t seen Skyfall though, I’ll have to. And I don’t like to spoil movies or TV shows, although sometimes I wish I would! I get so anxious thinking that someone is about to do something stupid and not knowing how it will turn out!

    I was just thinking of making a baked oatmeal and was searching a few recipes. Love the looks of this! I don’t think I’ve had cherries in over a year though but what a nice change from the usual fruit these days.

    Just out of curiosity…you’ve mentioned using frozen cherries before, and I’m wondering whether you can buy them pitted and frozen (and if so where?!) or whether you buy a bunch in the summer and then freeze them so you can have them year-round? If I had frozen cherries I’d probably put them in everything!

    Snow in Charlotte isn’t rare…. it snows pretty much every year… with more accumulation than this. Last year we didn’t really see any. But snow in Charlotte isn’t rare.

    Haha — I thought I was the only one who simply can’t handle the stress of suspense! I tend to spoil TV shows more than movies though (guilty of The Walking Dead too… and Dexter… and the Office)!

    That baked cherry oatmeal looks great! Frozen cherries are great, a cheap way to get one of my absolute favorite treats! I will have to try this! I love that eating roasted broccoli is keeping him occupied, what a healthy little man!

    That is how I get the kitchen cleaned too. My son loves broccoli too and his favorite is avocado. I am making this baked oatmeal in the morning. I bet almond extract would be good with the cherries and maybe a bit of cocoa powder!

    Just pinned this recipe, looks delish! We also just watched Skyfall last night, and I loved it! Daniel Craig is my fave 007! Not only is he sexy, but he is a smart James Bond with a chip on his shoulder, and while he gets the women, he isn’t quite as much of a womanizer.
    Henry is adorable and a good eater! Remember when you were worried he would only eat the baby rice crackers?
