First things first:  Have you ever had delicata squash?

Angela from Oh She Glows recently wrote about this squash and said it was delicious, but I was sold when she remarked that you don’t have to peel it.  A SQUASH YOU DON’T HAVE TO PEEL? I’m there!  I hate peeling squash.  But this squash’s skin is so delicate that it’s edible.

Another fall flavor…

 

Cranberry + Apple.

There’s a section of my fridge dedicated entirely to Thanksgiving food, and I warned everyone, “If you eat any of this food, I WILL KILL YOU… And you will have to go back to the store to buy the replacement.”  I broke my rule to steal a few cranberries.  Don’t tell.

 

I fried the cranberries with an apple on the stovetop (with a little olive oil and maple syrup mixed in).

I feel like I have a million-bajillion times to do today.

 

Normal Henry fun

Go to Petsmart before the Husband leaves for work and buy dog food

Clean the house from top to bottom

Wash and fold laundry

Begin prepping Thanksgiving foods

Do some PR work for my upcoming book release (!!!)

Run 4 miles

 

I just typed out that list and laughed hysterically. It’s sooooo not all going to happen before my mother arrives for the holiday.

    even though you have a lot to do enjoy those fall colors! that oatmeal looks great-it is similar to my apple pie oats i can’t get enough of lately!

    I love squash! I’ve never had the delicata one before, but the “no-peel” promise has got me wanting to try it. Good luck with your to-do list today. And happy turkey day tomorrow!

    I had a fabulous salad w/ roasted delicata squash at a local restaurant where I live and I’ve been able to recreate it. It was roasted squash on a bed of spinach topped with shaved manchego (a hard sheep’s milk cheese) and a honey and olive oil dressing. So easy and so so good!
    Also, the first time I tried delicata, I was rushed for time so I microwaved it and it didn’t turn out well at all. It needs to roast and get a little caramelization to truly shine.

    I actually just tried delicata squash this past week! I prefer kobucha though, and you don’t have to peel that either!

    Busy busy. I need to clean the house and start prepping on some thanksgiving dishes as well. But I’m not complaining 🙂 I love the holidays.

    I so had oatmeal topped with sauteed apples this morning! But I added cherries instead 🙂 Can’t get enough oatmeal!

    I just had acorn squash for the first time ever, which is another squash you don’t have to peel. It changed my life. Seriously.

    I have never heard of the squash before??? I love squash though, so I’d love to try it! Your oatmeal also looks delicious, I have to remember to top it off with apples. I usually stick to the typical banana.

    I think I remember that you’re a big Amazon person, but have you heard of Wag.com? It’s an all pet things site, and they have a whole slew of sister sites including diapers.com (all baby things) and soap.com (all drugstore/dry goods). You get free shipping after $35 or $50 depending on the site and you can combine orders between sites and everything ships and arrives either next day or day after. It’s been a lifesaver for not having to do those trips to petsmart, etc.

    I love how you cooked the cranberries on the stove top so easily like that. I’ve had cranberries sitting in my fridge for a while now and keep feeling like I need to do something complicated with them, but I love your easy and quick idea!

    I don’t eat the skin of acorn squash, but I always bake it in its skin and then eat out of it like a dish 🙂 Acorn squash is my favorite!

    I hate cutting squash so much! A lot of times I’ll offer to make the entire meal if my boyfriend will just peel and cut the squash. Sadly, he’s starting to catch on that it’s by far the worst job.

    And that oatmeal looks absolutely delicious! I don’t like cranberries and that has me wanting to run to the store and purchase some!

    I had to laugh about the fridge section that’s off limits. I do the same thing, except Im not organized enough to have an actual section and I expect the hubby to read my mind. Is this asking too much? hah.
    Glad you tried the squash! I need more…they are so small and dont last long!

    I love that squash. I split it length wise and brush with olive oil and use fresh garlic and a little salt and pepper then roast. Its fantastic and the only squash my boyfriend will est

    Seriously, you amaze me if you can get all that done! It’s a great idea to get it all down in writing though – I’m sure it helps keep you focused on your priorities. I need to try that!
