Breakfast Stir-Fry

I though to myself this morning, “If I eat one more breakfast of oatmeal, yogurt, or eggs on toast, I will surely scream.”  So I made a breakfast stir-fry.  Much better.

Thanks to frozen brown rice, this dish was really easy and fast.  Perfect for a Friday morning.  Super perfect for a Friday morning that my tea kettle in packed, my house is in shambles, my dogs are having anxiety attacks, my Internet is turned off, and my closet has barfed all over my bed.  Smile

 

To prepare:

 

Defrost 1 serving of brown rice in microwave.

Meanwhile, on a greased skillet, fry chopped broccoli.  Once it begins to brown, add in two mixed eggs and scramble together.

Once eggs are almost completely cooked, dump in rice and give it all a good stir.  Let cook for another minute or so.

Drizzle with balsamic vinegar and serve.  Yum.

Speaking of my closet barfing on my bed…

 

We decided to move our clothes in our car today instead of in the moving van tomorrow.  This is purely an attempt to pack one less thing in a box.

Moving secret: Stabilize hangers with hair fubbies.  Keeps them nice and neat during the move and makes it easier to rehang!

You can call ‘em hair ties, I still call them fubbies.  Don’t they look like fubbies to you?

    Love that quote! Your breakfast looks delicious. I usually opt for sweeter breakfasts (cereal, fruit, smoothies, oats), but once in a while I love mixing it up with something savoury like an omelette. Stir fry is next! Have a great Friday Caitlin! 🙂

    I have never heard the term “hair fubbies”! I call them hairbands! But that breakfast looks so good! I love broccoli with rice and eggs, perfect match!

    We always poke holes in the bottom up trash bags and create make shift hanging clothes bags out of them. SOOOO much easier to transport, keeps the clothes on the hangers and free from dirt/spills, and you just hang them and rip off the bag afterwards. Super easy!

    The hair fubbie is a good idea. I’ve used garbage bags to keep my clothes grouped/clean during my moves (three in the past year..oy). Just make a hole in the bottom of the bag and pull it over the hangers.

    Breakfast stirfry is a good break from the norm…today I was getting sick of my breakfast too and opted for a feta and fresh herb sandwich instead. Unconventional as well, as far as breakfasts go, but it ended hitting the spot perfectly. Sounds like your stirfry did the same.

    Try to enjoy packing (music or listening to a podcast helps) and it might seem overwhelming now, but soon you’ll be settled in and things will feel back to normal…Having moved twice in the past year, I feel that when I kept thinking like that, it really helped.

    Sweet breakfasts have been really offputting to me too lately – gotta get more creative than eggs and toast! I’ll have to switch it up with a stir-fry next week!

    Ahh I wish I had thought of the hair tie around the hangers when I moved! I kept everything on hangers and just folded them into trashbags to move easily but when I opened them all the hangers were all tangled and it was such a pain.

    Yum, I could go for a good stir fry right about now.

      It’s not a rumor; it’s true. I’ve seen the screenshots of the comments that were originally posted and you can easily see which ones got deleted if you compare it to the post this morning. Honestly Caitlin, this seems pretty shady. I’ve been a reader of yours for quite awhile and I’ve stuck up for you several times when people on other sites were bad mouthing you. I’m no lawyer and I have no idea whether or not the giveaway was illegal the way it was before. But it seems super shady to just change the rules, delete the comments, close the comments, and act like nothing happened. The internet doesn’t forget and the fact that I’ve seen the screenshots posted in several places proves that.

        Hi Sara and Kimberly:

        First of all, I did delete some comments that are in violation of my comments policy, which is that comments that are rude, mean-spirited, or personally attacking will be deleted. I left up comments that expressed concern about the giveaway in a nice manner.

        Secondly, the giveaway as originally run was not ‘illegal.’ I conferred with Penguin’s legal team and they confirmed this. So, to the best of my knowledge, the giveaway as originally run was fine. That being said, I can see in hindsight how people were irritated about it, which is why I happily changed the rules for the entry and noted in the post that I was changing the rules. I’m not hiding anything, I think this was very upfront and a transparent response to the readers who commented on the post in a kind way. I certainly am not acting like nothing happened; I said sorry to those who were offended in the edit of the post.

          You should really post your comments disclaimer somewhere publicly; it’s not on the main page anywhere.

          People put work into commenting and should know what the rules are.

            Caitlin, maybe you can explain how “tacky” is consider mean-spirited, but a comment that is up on this post stating “people suck, you rock!” is not considered to be the same?

            Is it only “mean-spirited” if directed towards you, and not your commenters?

            Seeing as how mine was one the “mean-spirited” comments who called it tacky, I’d also like an answer.

            I don’t think calling your actions yesterday tacky is mean-spirited at all, but merely being honest about how ethically compromised the whole situation felt to me. I didn’t call you names (I called the situation tacky, not you), or swear, or go off on a tangent insulting you.

            I would tell my best friend she was being tacky if she tried to pull something like that. I feel you handled the entire situation badly, and it’s made even worse by the hypocrisy of allowing your readers to say nasty things about each other.

    Smart idea to use the hair ties to secure the clothes! I hate moving, so in my opinion having one less box to deal with would be amazing. I dont mind packing up the box but hate unpacking..
    I understand how you feel about eating the same breakfast foods. I eat the same thing every single day until I totally burn myself out 🙂

    Stir fry is definitely good for a change. My nutritionist has me on a strict diet though. Good for you that you are allowed to have yogurt. 🙁
