Let’s talk about Pancake Truffles.

IMG_6573

A couple of years ago, I woke up with this recipe in my head.  It was like I had dreamed it.

Pancake wrapped around a melty banana?  Yum.  Yes, please.

IMG_6577

Even though Pancake Truffles are, by far, my favorite recipe, I never make them!  The prep process is kind of messy because you’re rolling your hands around in pancake batter.  But it’s totally worth the effort.  Especially when you drizzle them in caramel sauce.

IMG_6569

If this breakfast will not get me through my day, I don’t know what will.

In other news, I suck at morning workouts.  I had these grand plans to hit the pool first thing this morning, but my bed was so comfortable.  I’m better at getting out of bed for exercise when I know it’s my one and only shot that day, but if I have any sort of flexibility, I’ll remain glued to the sheets.  I should invent a bed with a comfortable and uncomfortable setting that you can switch on when your alarm goes off.  It would go from soft and squishy and warm to hard and itchy and cold.  Isn’t that genius!?  DIBS!  Don’t steal my idea.

Are you a master of morning workouts?

You should get an ebelskiver pan! It’s for making filled pancakes! My parents gave me one for Christmas and it’s easier to make fancy filled pancakes in it than to make plain pancakes on the griddle!

    • CaitlinHTP February 2, 2012, 4:51 pm

Just googled – that looks awesome.

  • Khushboo February 2, 2012, 9:07 am

Can you pre-make the batter? If you’re anyways getting messy, may as well stock up!

  • Cara February 2, 2012, 9:10 am

    Those pancake truffles look incredible!

I love morning workouts! If I don’t work out in the morning I never do, I continue to put it off until I decided I’m just too tired. So up and on the my way is the best for me when it comes to getting a workout in!

  • Kath February 2, 2012, 9:11 am

I definitely need to make these soon.

  • kathleen @ the daily crumb February 2, 2012, 9:16 am

as a high school/college swimmer i can testify that there is nothing more terrible than the thought of getting out of your warm bed to jump in a cold pool. i don’t blame you for snuggling instead of swimming!

  • Annette @ EnjoyYourHealthyLife February 2, 2012, 9:21 am

This is a GREAT idea! Yummy!

  • Angela @ Eat Spin Run Repeat February 2, 2012, 9:22 am

Ok, have I been living under a rock? WHY did I not know about pancake truffles before?! They sound fantastic!!

  • Jodi @ Jodeexi Writes February 2, 2012, 9:25 am

I have the same problem! It’s not problem for me to get out of bed during the week when I know I have to go before work…but on the weekend when I have plenty of time it’s a struggle to get there! And WOW those pancake truffles look AMAZING. Must try soon!

  • Kristen@Change of Pace February 2, 2012, 9:28 am

Anything with the word truffle following sounds amazing! These look amazing too!

  • claire February 2, 2012, 9:29 am

I need that “uncomfortable” bed setting stat. Please get on that.

  • Claire @ Live and Love to Eat February 2, 2012, 9:31 am

I would like to be a morning workout person someday!

    I love to make banana-stuffed french toast – it’s a bit less messy! 🙂

  • Emily @ Comfortable Home Life February 2, 2012, 9:31 am

I loathe morning workouts! Every day for just about the past year I would say to myself, “tomorrow I’ll get up early to work out” and it has worked maybe 0.2% of the time. I’ve just come to accept the fact that I’m an afternoon worker-outer, my bed is wayyyy to cushy to leave early in the AM!

  • Rachel February 2, 2012, 9:34 am

I admit I’m all about the morning workouts (think: 4:50am!). Even when I was training for my marathon, I was up at 5:30 on Sundays just to get my long runs done early. I love finishing a workout just as the sun is coming up! I feel so accomplished, and have the rest of the day to do whatever I want, without my workout hanging over my head.

    • CaitlinHTP February 2, 2012, 4:50 pm

You are amazing! I can’t imagine having that type of dedication.

  • Lindsey February 2, 2012, 9:34 am

haha, definitely not! I used to be but this winter so far I have not done very good at getting up in the mornings to workout.
PS Your pancake truffles are amazing!

  • Lisa Marie February 2, 2012, 9:35 am

SAME! I am a last minute work out kinda gal! My boyfriend rather wake up early and “get it over with”….while I rather wait until the end of the day after I know I relaxed and did all of my chores! strange.

  • Amber @ Busy, Bold, Blessed February 2, 2012, 9:36 am

I suck at getting out of bed in the morning! BUT I did get up and walk the dog this morning when it was still dark, it’s a start!

  • Katie @ cooklaughmove February 2, 2012, 9:40 am

I think that same thought every morning! I love my fleece sheets at night, but burlap would really get me up in the morning!

  • Liz February 2, 2012, 9:43 am

I am so much of a morning exerciser that if I don’t work out before 9 am I feel completely out of wack for the rest of the day. I feel like my body doesn’t move, my brain feels fuzzy and I just feel plain awful. I hate afternoon workouts. I can’t workout with food of any kind in my body, so if I don’t work out as soon as I get up, it can’t happen later. I also think it comes of years of competitive swimming, where practices at 5:30 are the norm- its hard to undo that kind of conditioning!

  • Joy - HTP Mom February 2, 2012, 9:45 am

A bed with the UNcomfortable control….YES. AND, let’s add a remote that opens the curtains, starts the coffee, turns off my “white sound” fan, and oh heck, – somehow your Pancake Truffles appear on my table!! Hey, I can dream. They look delicious.

  • Abby February 2, 2012, 9:49 am

I did the exact same thing this morning and now I have to squeeze a run in this afternoon. Fail!

  • Brita February 2, 2012, 9:53 am

haha, Itchy and cold! The worst combination! Have you heard of the SnuzNLuz? Not the best name ever, but a pretty compelling idea!

    http://www.thinkgeek.com/stuff/41/snuznluz.shtml

And this isn’t spam, I swear, I just think it’s a creative way to get the heck out of bed 🙂

    • CaitlinHTP February 2, 2012, 4:49 pm

This is the most genius invention ever.

  • Anne @strawberryjampackedlife February 2, 2012, 10:02 am

I’m just like you. We have the most comfortable bed with 600 thread count sheets. I can barely get up to go to work, let alone the gym. In my morning haze I think “I can just go to the gym tonight.” Of course I won’t want to.

  • Laura February 2, 2012, 10:08 am

I wonder if you could just pick up the banana pieces with a fork or something and just swirl it around in the pancake mix so you don’t get goop-ey hands… or maybe make it in a mini-muffin tin so you can just pour in a little batter, add the banana chunk, and pour a little more on top?

    • CaitlinHTP February 2, 2012, 4:48 pm

      GENIUS Laura. GENIUS!

  • Sneakers2Sandals February 2, 2012, 10:09 am

it’s funny how different everyone is. first thing in the morning is the only time i have motivation to work out. if i don’t do it then, i’m done for!

  • Anna February 2, 2012, 10:11 am

When I worked 9 to 6 I HAD to get used to morning workouts to fit them in. Thankfully the habit stuck and I couldn’t think of a better way to start my day 🙂 Howeeeevver, I do NOT like the thought of getting in a cold pool if I am in my warm bed so I feel ya on that!

  • Cara @ I Don't Believe in Diets February 2, 2012, 10:12 am

haha that is a great dream. my pups love to cuddle so it is definitely harder to get up to workout in the morning. but if I workout at home they tend to follow me and try to cuddle with me while working out, so it is kind of okay. haha.

  • Katie @ Peace Love & Oats February 2, 2012, 10:13 am

oh my gosh. those look insanely delicious.

  • Faith @ For the Health of It February 2, 2012, 10:20 am

Ooh, that is really creative! I love “stuffed” foods – it’s seriously like two treats in one.

  • Hananh February 2, 2012, 10:29 am

I definitely could have used a cold, itchy bed to get my butt up & ready for class this morning.

  • liz February 2, 2012, 10:29 am

I have the same issue – bed is too cozy! Now I set two alarms: an alarm clock next to my bed, and a second alarm(I use my cell phone)set for 1-2 minutes later than the first, and I place it in the bathroom. I’m forced you to get up to shut off that 2nd alarm!

  • Mallory February 2, 2012, 10:52 am

Not to brag but…I OWN morning workouts 🙂 I used to hate them but as my life started getting busier, the morning is the only time I have time or motivation to exercise. If I don’t, I spend all day thinking of excuses.

  • Jordan@almondjay February 2, 2012, 10:53 am

If I can roll out of bed then I am committed to working out in the morning. The hardest part is getting one foot out of the bed, but once that’s accomplished I put on workout clothes immediately and force myself out the door.

  • Liz @ Tip Top Shape February 2, 2012, 10:54 am

It depends on what I’m doing. If it’s something gentle like yoga or pilates, I can usually wake up and get right to it. Cardio is a challenge for me, though. If I have the time I usually try to eat breakfast first, chill a bit, and then launch into the workout.

  • Jennifer February 2, 2012, 11:01 am

NO, I am terrible at doing morning workouts. I would like to pre-order your comfortable/uncomfortable bed. Thank you! 😉

  • Laura O. February 2, 2012, 11:15 am

Ugh, HATE morning workouts, but unfortunately only time I can do them. Coffee = my reward, that gets me (somewhat) motivated!

  • Sarah February 2, 2012, 11:16 am

Ugh I have the same problem with morning workouts. My Jack Russel likes to sleep under the covers and snuggle up to my feet with her warm, fuzzy little body. How am I supposed to walk away from that kind of cozy?! Impossible!

  • deva at deva by definition February 2, 2012, 11:31 am

I typically work out first thing in the morning because it’s really the only time I can. My biggest motivator is knowing that the alarm is going off and waking up The Boy, and that if he is going to wake up for MY alarm, then I really should get up and get moving!

  • Poptartyogini February 2, 2012, 11:58 am

I’m not a morning mover unless I’m going to a class. 8:45 yoga on Saturday morning is early enough for me. Otherwise I have the best of intentions but never get my caboose off the couch.

  • Jessica @ The Process of Healing February 2, 2012, 12:12 pm

If that doesn’t start your day off on the right foot, I don’t know what does!

  • Kaitlyn February 2, 2012, 12:18 pm

Yes, I love morning workouts. Did mile repeats this morning at 6am. I love getting my workout out of the way in the morning and being able to relax in the afternoon/evening. BTW, your truffels look amazing!

  • Jen @ Whittle My Middle February 2, 2012, 12:22 pm

Those pancake truffles look amazing! I’m definitely not a morning workout person. I’ve tried to get into it a few times but just can’t.

  • Jen February 2, 2012, 12:26 pm

I suck at morning workouts…heck, I’m not so great at after work ones, either 😉

Also, I just read this on msnbc.com and thought you’d enjoy as it relates to your naked face challenge! “For young girls, it all starts with lip gloss” http://today.msnbc.msn.com/id/46211124/ns/today-style/

    • CaitlinHTP February 2, 2012, 4:45 pm

      Interesting article… I guess if there’s a market, there’s a product!

  • Emily February 2, 2012, 12:29 pm

Once again, your breakfast looks so DELICIOUS!!! You need your own cooking show!

    • CaitlinHTP February 2, 2012, 4:43 pm

      Aw thanks, Emily!

  • Ari @ Ari's Menu February 2, 2012, 12:52 pm

I used to be so good at getting up early and working out first thing, but it has been so hard lately! My husband doesn’t have to get up until almost 8, and so staying under the covers with him seems so much more appealing than jumping out of bed.

  • Kate (What Kate is Cooking) February 2, 2012, 1:01 pm

We had an Invention Fair in elementary school and I “invented” a bed that would launch you in the air when your alarm went off. I could really use one of those some mornings!

  • Amber K February 2, 2012, 1:05 pm

I have to eat before I exercise otherwise I get nauseous. And I can’t eat for an hour after I take my thyroid pill in the morning. So I’m more of an early afternoon exerciser!

  • Whitney @ The Adventures of Now February 2, 2012, 2:40 pm

I’m transitioning to morning workouts – and it’s not easy! I got the iLuv dual alarm bed shaker …still doesn’t prevent a snooze button war though. The key is being awake enough to get out of bed but not enough to realize what you’re doing before you’re out the door & can’t back out.

    • CaitlinHTP February 2, 2012, 4:42 pm

BED SHAKER? Like it literally shakes the bed?

  • Gabby February 2, 2012, 4:29 pm

I think what you’re doing is awesome. I just moved back to the Detroit area and realized that I’d forgotten how important appearance is! I was shopping at Nordstrom the other day and the sales people were VERY attentive because I was very well dressed (because you dress up to go shopping here) but I noticed a woman in the dressing room who was in old workout clothes that wasn’t getting any attention! I’d be lying if I said that this really bothers me because people around here respect you if you dress well (and I do…largely because of my upbringing, just ike you), but it gets you thinking.

  • Chelsea @ One Healthy Munchkin February 2, 2012, 6:42 pm

I like working out in the morning, but not the early morning. 8 or 9 is the perfect time!

  • Cheryl Mosley February 2, 2012, 9:20 pm

Those truffles look incredible! Can’t wait to try!

  • Katie February 2, 2012, 10:13 pm

    WOW! These look super delicious!!!

  • Jess February 3, 2012, 5:36 am

I’ve never been a morning workout person, so I don’t press the issue. The best time for me to workout is 4pm, which is perfect because I finish work around then and the gym is on the way home!

  • Sarah February 4, 2012, 7:30 pm

I totally forgot about these! I lOVE THEM!! I wanted oatmeal for breakfast tomorrow but I think these will win!

  • Sophie @ threetimesf February 12, 2012, 1:38 pm

Omg I totally need one of those beds!
