Long Day, Early Night

My fellow Americans – do you LOVE the long weekend thang or what?  Even though I’m planning to work, the Fourth is just such a fun holiday!  It’s like summer break.

 

My day was filled with writing, working at the clinic, walkin’ pups, and wetting my whistle (I heart alliteration).  I got a peanut butter slam for breakfast.

Oh – and I did something fun for lunch.  Have you ever steamed your own beets?  I usually buy the pre-steamed beets from the refrigerated section but thought I’d figure out how to cook my own.

I just threw a few scrubbed beets in a big pot of water and cooked them until they were tender (probably 25 minutes).  Then, I let them cool down and rubbed off their skin using my fingers.

Chilled and sliced on top of my salad.  With the perfect complements – creamy balsamic (the Simply Dressed brand) and goat cheese.

Lots of writing and EnviroKids Organic PB Panda Puffs later, I called it a day as far as work goes… There are only so much words I can put out on a weekend.

 

The Husband and his sister requested that I make the famous Mmmm Sauce for dinner.  I like how Mmmm Sauce is considered the entrée!   In the mix: carrots, more greens mix, chickpeas and kidney beans, and loads and loads of cilantro-laced Mmmm Sauce.

I think it’s going to be an early night.   But I think early Saturdays are the best part of a long weekend… especially after a late Friday!

    I love steamed beets! Roasted beets too, but sometimes the steamed version just hits THAT spot. 😀

    Your “Mmmm… sauce” sounds delightful. Mmm…literally.

    The Mmmm sauce looks so good, I have been wishing I could make it ever since you first posted it but my husband is allergic to chickpeas (and all other legumes) do you think there is anything I could sub in for it? I am guessing it is pretty crucial but I thought I would ask! Thanks! Have a lovely weekend!

      Edamame? Wait – is that a legume?…Eggplant, zucchini maybe? I’m just guessing here because I know chickpeas are used in hummus. And I’ve seen hummus recipes that call for zucchini or eggplant instead 😉

        I would say any type of white bean – does that count as a legume? Maybe with cooked white potato, skin removed?

    I have been all about roasted beets lately!!!! Yummmmmmmmmmmmm!!!Only thing is… and don’t freak out like I did… eating alot of fresh beets it will turn your ummm… bathroom outputs reddish. I thought I was bleeding. Only me. 🙂

    Don’t judge…but I picked up canned beets the other day 🙁 – yes, there’s some salt added, yes I should make my own – but give a girl a break! 😉

    All you need now is dessert – and Don’t work too hard this weekend! I feel like I have Monday off now too with all this Holiday talk – if only!

    Beets are one of my favourite root veggies! When I was a kid, I was addicted to my mom’s pickled beets. I ate so many that I peed red and my mom brought me to the doctore.

    That is how I prepare my beets — and beets + goat cheese were made for each other. They taste so good together!

    Although it makes me question my youth, I love early Saturday nights! It’s nice to wake up rejuvenated on a Sunday morning and be able to make the most of the day.

    Mmmm sauce is definitely good enough to be considered the entree! I love going to bed on Sunday and knowing the next day is NOT a work day. Definitely the best part of a long weekend for me.

    Mmmm sauce is pretty much the greatest thing ever. I don’t know what we would all do without Mama Pea and her amazingness.

    I have honestly never really tried beets before. They kind of scare me for some reason.

    Yum!! Looks so good. I prefer roasted beets to steamed, but either is sooo much better than shop bought. I think I spoiled myself by making my own, I can’t buy the pre-packed stuff anymore!

    hey caitlin i was wondering if that is millet or quinoa in your salad? if it is millet it looks uncooked? i wanted to know if millet can be eaten differently than boiled in water… sometimes it is in things like tempeh or ezekiel bread and it is hard and yummy and uncooked i think? does this make sense? thanks!

    I love roasting beets. Just cut the greens off and the tip, wrap each individual beet in foil, and then roast at 400 degrees for about an hour. Unwrap them when you want to eat them. Just slice them cold for salads, or slice them and sautee them in some olive oil for warm.

    I love the pre-steamed beets at Trader Joe’s, but I need to try roasting my own sometime! My white counter is afraid of the beet red stains though!

    I love beets! I’m actually super excited because they just picked the first batch of beets this season at the farm where I work!

    I bought some beets to try (I can’t believe I have never in my life tried one!) but after reading about the amount of time it takes to roast or cook them, I sure as heck better love them raw. Patience is not a virtue I’ve learned yet 😉
