Coffee Banana Soft Serve

Good morning!  This is how I feel about Monday:

Laying in bed > working.  Obviously.

 

After a fun Saturday (guess what? I didn’t drown during my Open Water Challenge race!), Sunday was kind of blah.  I didn’t feel very well, emotionally or physically, and spent most of the day laying on the couch or the patio and staring at a book/the TV/the wall/the back of my eyelids.

But with 11 hours (OMG) of sleep under my belt, I feel much better.

 

So much better, in fact, that I have this AMAZING breakfast to share with you…

I’m OBSESSED with coffee, and the love for java definitely translates to ice cream.  I will always choose coffee ice cream over the other ‘traditional’ favorites like cookie dough or mint chocolate chip. 

 

But coffee ice cream for breakfast?!  Well, of course – if it’s secretly Banana Soft Serve in disguise!

Coffee Banana Soft Serve

 

Ingredients (for two servings):

 

  • 2 bananas, frozen in chunks
  • 2 large dates
  • 1 tablespoon cocoa powder
  • 1.5 tablespoons instant coffee (powdered)

 

Directions:

 

  • In food processor, combine all ingredients until a soft serve is created.
  • Depending on the consistency, you might want to re-freeze for a bit.  Generally, if you eat it within a day or so of making it, you won’t need to re-process.  Otherwise, just give it a whirl in the processor again to create a soft texture.

 

I enjoyed my Coffee Banana Soft Serve on top of some French toast with blackberries.  That makes it an acceptable breakfast, right?

    Your ice cream seems so much more solid than I’ve ever been able to make it. Mine is usually thick milkshake consistency. What’s the trick?

    Coffee ice cream is one of my favorites, and this just screams out to me. I have to remember to make this!!

    Ok um that breakfast is good enough to be on any restaurant menu- YUM! I lovee coffee ice cream too! I have a feeling you would have loved my bday cake: brownie cake with one layer of choc chip ice cream and a second layer of coffee ice cream!

    I’m with you – coffee ice cream is really delicious, and I would choose it over most other flavors [except banana, which is kind of funny]. 🙂

    I had one of those types of Sundays too! Every now and then I just get in a funk like that for no reason. 11 hours of sleep sounds glorious. I will have to try that next time!

    That IS a gorgeous picture of Maggie.

    Have you ever tried using date molasses instead of dates to sweeten up a soft serve (Or anything really). It keeps it a lot smoother and is easier to blend into the bananas

    Yum! I love coffee too. I felt crappy on Sunday too but that’s because I enjoyed too much beer on Saturday night. Oops!

    Yum! I got my husband to try banana soft serve once. He said it was good, but never ate it again. I think he would be all over it if I made him this- what a great idea!

    Yeah I was definitely the only ten year old kid who would order coffee ice cream instead of bubble gum…that stuff is GOOOOD!

      I have to throw in some almond milk if I want to use my MB. It ends up more like a thick smoothie but I’m sure it’d be more solid if I ever had the patience to throw it back in the freezer.

    ugh, that’s how I feel about Monday too. Just not ready to wake up… I wish my kids would sleep in till 11am one morning. Maybe I can catch a nap during their nap time!! 🙂

    YUMMMMM! That looks so great! I need to remember to slice up my bananas pre-freezing. I have a bunch of bananas in my freezer that I’ve been steadfastly ignoring, because I forgot to peel them, and they just look brown, hard, and intimidating now. haha!

    About a year or 18 mos ago I starting making choc coffee softserve, too!

    Except I actually use a 1/4 c or thereabouts of brewed coffee rather than instant coffee. It helps in the Vita to have a little liquid for blending purposes and the coffee does the trip.

    Did you eat all the soft serve? I don’t think I could manage two bananas, with the bread. Is it possible to make a smaller batch of soft serve with only 1 banana, or does that not work well?

      It makes two servings! You can freeze the remainder.
