Oh, Happy Day

Thank you, thank you for your kind donations!  As of right now, Tonya, her husband, and their two children have received $5,919 in donations.  It was AMAZING to watch the donations roll in.  I never could’ve predicted the positive response.  Tonya says thank you!

 

If you can believe it, my day included a trip to the dentist to get two cavities filled and a trip to the lady doctor for my annual exam.  Now, I do not know what I was thinking when I scheduled these appointments on the same day!  And normally, that would be the magical formula for a very blah day indeed, but my ENTIRE DAY was so much brighter because of your kindness!  You all managed to turn my frown upside-down in so many ways today.

 

Post-teeth drillin’ smoothie.  In the blender:  frozen banana, frozen strawberries, rice milk, chia seeds, sunflower butter, and brown rice protein powder.

Leftover macaroni and cauliflower casserole and scrambled eggs with spinach once my anesthesia-ed jaw came back to life!  I made this Real Simple recipe for the casserole on Sunday, and it froze really well for dinner tonight.

I spent the afternoon locked in FABO Café working on my book and drinkin’ iced coffee.

…And I spent the evening at Petite Philippe working on my book and drinkin’ a glass of pinot noir.

Self-employed people must office-hop for maximum productivity.  It works; I’m telling you!  Sometimes I go to three locations in a day and write!

 

Dinner featured QUINOA.  Quinoa for breakfast, quinoa for dinner.  It’s a wonderful thing.  Ready in 5 minutes when you boil it.

All mixed together:

 

  • Boiled quinoa
  • 1/4 cup white bean basil hummus (from Trader Joe’s)
  • Stir-fried broccoli
  • 1/2 cup chickpeas
  • Cherry tomatoes
  • Goat cheese

We had Angela’s date bars for dessert.

 

Oh, and I did something cra-azy…  I shall explain tomorrow!

    I can’t believe how mnay people this blog reaches out too. I am absolutely amazed at hoe much money everyone has pitched in for TOnya already. Have you thought about doing a blogger bake sale? I know you’re busy, but I think that would raise a lot of money! I would definitely participate!

    your day deserves more than some date bars (which thank you for re-affirming that they ARE fabulous..i shall be making them soon) but your day deserves some wine or jello shots or something. lol

    a trip to the dentist AND the gyno..on the same day? You, my dear, need to go sit down and crack the vino and watch some mindless tv or something that you deem 100% relaxation b/c you deserve it 🙂

    WTF isn’t cursing! {Neither is saying “effing” for that matter}. Cursing is when your {someday} kids say the word(s) and you think “oh shiz, I can’t believe they just said that.” 🙂

    I think I’m going to try office-hopping this summer, as I am freelance/contract employee for one job and studying for the bar examination at the same time. I definitely need any boost of productivity I can get!

    Hi Caitlin! I found your blog through peanut butter fingers and think youre awesome! I saw some post-its at my gym the other day that said “you are beautiful just the way you are” and I had no idea it all started from you! I think Operation Beautiful is great thing and I am looking forward to following your blog!

    Also- I just checked out the marie claire atricle article and your response. I am so shocked than anyone can spin what you – and other healthy lifestyle bloggers – do into a negative, unhealthy “addiction”. It is so insane, especially when looking at all the unhealthy images magazines like Marie Claire put out there. I support you 100%- keep at it! You go girl!

    U make quinoa look so easy- I always either undercook it or cook it too long that it’s a soggy mess! SO pleased about the amount donated- you really are something special Caitlin.

    Just an FYI–I had an “account restricted” error come up when I tried to donate. Eventually, I got through, but I was charged 3 times on my credit card. This triggered my card’s fraud protection alert. I don’t know if it was just a weird glitch, but if anyone else had something similar happen today, that is probably the reason why.

    Cafe “office” hopping is a great way to stay motivated for a long writing project. It was the only way I managed to finish my dissertation!

    do you have any recommendations for protein powder? I’ve gone veg but feel like I am not getting enough protein. I make smoothies all the time so I thought it would be a good spot to add some in. Not sure if you’ve done a post on this before or not. Thanks 🙂

      Hi there! I drink a dairy-free protein powder by Standard Process (you have to get it through a doc, if you want to buy it from the clinic, you can email my husband and he’ll order it for you! kboyle@holisticcharlotte.com). But I’ve also heard good things about Sunwarrior.
