How to Make a Pretty Omelet

Omelets are all about technique – the ingredients are quite simple.

What you’ll need to make this Goat Cheese and Mushroom Omelet, ingredient-wise:

 

  • 2 eggs
  • Dash of milk
  • Salt and pepper
  • Shredded spinach
  • 1/4 cup goat cheese
  • Sliced portabella mushrooms

 

What you’ll need, tool-wise (TWSS):

 

  • Non-stick pan with a small, circular base.
  • Non-stick spray.
  • Plastic spatula.

I know there are concerns about whether non-stick pans are safe.  I’m in the camp that it’s find to use them as long as you don’t overheat them and don’t scratch them up with a metal fork or spatula.   This article in Good Housekeeping sums up the pros and cons.  The key for omelets is to pick out a pan that as a small circular center because it will form the omelet shape.

 

If you’re going to put veggies in your omelet, you’ll probably want to pre-cook them.  Just throw the veggies in the wok for a few minutes.  You don’t really need to pre-cook spinach, though.

Then, mix two eggs with a fork. Don’t beat them too much!  Add in some milk (or soy milk) and stir once more.

Heat the wok to medium heat and spray thoroughly with cooking spray.  Pour the egg mix into the center of the wok and tilt the pan so the eggs form a little circle.

 

Once the eggs cook for a minute or two, add the veggies on one side and the cheese on the other.  Salt and pepper it, too!

Let the omelet cook for another 3 – 4 minutes.  Using a non-stick spatula, carefully lift the edge to see if it’s cook thoroughly.  The cheese side is only going to get one shot to cook in direct contact to the pan, so you want to make sure it’s beginning to brown.

Once it’s browned, flip the cheese side over the veggie side like so:

Let cook for a few more minutes and then slide onto a plate.

 

Tada!  You have a pretty omelet, just waiting to be eaten.  🙂

Yesterday, I bought the new Adele CD and am now obsessed.  She is amazing – have you read any of her interviews? She’s so badass and inspirational.  I really love this song in particular.

    Man that has spurred a hankering for eggs! I never bother pre-cooking my veggies and it works fine! I cant tell you the number of times that my planned omelet inevitably turned into scrambled eggs- gah! Like you, I’m very careful with not scratching my non-stick pans!

    Confession: I only ever made omelets in a “special” little (cheap!) omelet “tub” type thing that did all the work. Meh – it worked. Haven’t had them in a while though.

    Nice flip!! I always get such a sense of self satisfaction when I make a pretty omelette – I usually tend to over-stuff them with veggies and they fall apart. Yours sounds delicious and I’m LOVING portabello mushrooms right now so it’s making me hungry for breakfast all over again!

    That omelet looks so yummy but I can’t seem to force myself to like omelets. I make them and I try to eat them and the texture really turns me off. I feel like I try to shove it down just to eat it and then I stop because I want to enjoy the food I put into my body. 🙁 I’ll keep trying though!

    Thank you so much for sharing the article about non-stick pans. I had NO idea about overheating the pan. I love non-stick pans because they’re so easy to clean etc but I will definitely be more careful about over-heating my pans!

    I don’t use a spatula though. For my flip, I just wait until it’s all done then slide half off onto my plate and use the pan to fold it over. One less dish to wash!

    I’ve never heard Adele before, I’ll have to check her out!

    I love omelets! I usually put the veggies in the pan first, let them cook, pour the eggs over them and then fold. Then I flip so both sides get fully browned. Yum. 🙂

    I definitely use the “low and slow” method for cooking omelettes! If they get heated too fast, they are no good!

    Um, Adele has my heart, for sure. This CD is INcredible, I love the first two tracks and Someone Like You (the last one). Have you listened to 19 much (her 1st CD)? It’s fantastic as well, just a different sound. She’s on the cover of Rolling Stone, too, with a great story. I’m going to see her in Atlanta in June; I cannot wait!
