I’m POOPED!

Today has been quite fun, but I feel pretty beat after running a fast 5K and two extra miles.  It’s crazy how much speedwork wears you out!

 

I took Anne, BFF Sarah, and TK to a Mexican restaurant called Cabo Fish Taco for lunch.  I’ve been hearing about this place non-stop since I moved to Charlotte and was excited to try it out.

I ordered the Burrito Verde, which was a rice, beans, cheese, and vegetable wrap, with a side of fruit.

As well as a few of the communal chips and corn-based salsa:

After some walking and shopping, we came home and took a vote.

 

1) Go out or 2) Take a nap?

 

Everyone voted for take a nap.  I went down for the count for about an hour and a half.

 

We woke up and I made us Green Monsters.  In the mix: 1 cup rice milk, 1/2 banana, 2 cups spinach.

Anne and I both still felt pretty pooped, so we just took Ladybird (the boxer/pit mix) on a long walk around the neighbor.  Then, her and the Husband went to the clinic so she could have her first acupuncture appointment, and I made everyone dinner.

 

One great meal:

The *stars* of the show included roasted butternut squash, corn, and broccoli, as well as roasted chili chickpeas (really simple:  drain and rinse a can of chickpeas, mix in chili powder, and bake for 10 minutes).

The finished product was absolutely divine!

We’re off to get a big glass of wine!  Have a great Saturday.

    Glad you finally made it to Cabo…it’s tasty! Your husband is so awesome–he seems to give everyone who visits an acupuncture treatment.

    This has nothing to do with your post–but I was at the salon today reading a Glamour magazine and they had a page dedicated to Operation Beautiful! I’m sure you know that already, but it was exciting to see 🙂

    Dinner looks good! It must be awesome to cook for people who are vegetarian or are at least willing to eat an entirely vegetarian meal. Cooking definitely gets annoying in my house sometimes!

    I love that all the dogs get along. My dog is a dominant diva and often starts trouble so I’m totally envious of that.

    I love the feel of that Mexican restaurant. It looks like it would be easy to order a healthy meal, which can be super tough at Mexican places.

    That meal looks amazing. I just came home with butternut squash from Trader Joes and now I know what I’ll make with it. Is 10:00 too late to make dinner…or a second dinner 🙂

    Oh my gosh! Cabo Fish Taco is one of my favs. There’s one in Blacksburg where I went to school–definitely wish they had more locations now that i’m an alum! Glad you enjoyed it!!

    Do naps not make it hard for you to sleep in the evening? The maybe one time I’ve ever taken a nap, I didn’t get to sleep til about 3am!

    Whenever I have a long run (or a fast run) I need to sleep. I just get so worn out!

    Your dinner looks lovely!

    Do you get accupunture from your husband? I’m just curious about the process, so I was wondering if you get it too.

    hey caitlin! ive been searching for specific types of posts on your blog but i’m not sure if i either can’t find them, or you haven’t written any! i wanted to read any “marathon reflection/advice” type posts…like what you would do differently, advice you wish you’d known, the best/worst/unexpected things, etc. have you written anything like this? if not, do you think it’s something you might do in the future?

    if you couldn’t tell, i’ve just signed up for my first marathon…disney 2011! i’m super excited but i have sooo many questions, despite reading about your (and other bloggers) marathons for a while now. thanks!

    we have a cabo here in blacksburg and I love it..that burrito is my favorite thing there!!
