Lucky $2

Bit a of whirlwind day!  My plan was to run a few errands, get some work done, clean the house, bike with Ashley, and hang out with my friends from Miami tonight.  But I was in a wee bit of a car accident around 12:30 on my way home!   Nothing major, but I did [...]

Pumpkin and Pizza Face

Thanks to your support, Jess raised more than $700 for cancer research through her Win a Garmin 305 raffle!  The winner was Jennifer.  :) Jess says thank you so much for supporting her.  :)   I have figured out why I am so obsessed with canned pumpkin. Canned pumpkin pumps the volume up for my [...]

Just Like Chipotle

It’s no secret that I love Chipotle’s vegetarian bean burritos (or the burrito-less “bowl”), but they are expensive, and the portions are a little large.   My at-home version of the burrito bowl: Black beans, brown rice, salsa, broccoli, mushrooms, corn, and cheddar cheese…. it was a great dinner!  :) I still love Chipotle, though.  [...]

Guest Post: How to Swim – Part II

Missed Part I of “How to Swim,” which discussed how to hold your body and how to move your arms?  Check it out here.   Hi Healthy Tipping Point readers!  It’s Ryan (from Greens for Good)! After helping Caitlin with her swimming technique, she asked me to write a post with some swimming tips. I [...]

BIG RACE ANNOUNCEMENT

I have a big race announcement!  But first… lunch!   I was inspired by a lovely (non-vegetarian) recipe on Zesty Cook’s blog and thought I’d make a veggie version of Baked Pasta Casserole. This mini casserole dish contained:   1 cup cooked wheat wheat pasta 5 chopped black olives 1/4 cup kidney beans 1/4 cup [...]

A Giving Heart

James always sits on the rug separating the kitchen from the living room and snoozes while I cook breakfast. It cracks me up.  :)  Dogs are great.  I am pushing for a THIRD one, actually.  I see the disadvantages (more dogs = more work), but I still want one (more dogs = more love).   [...]

Adventure Race!

Tonight, I watched the most motivating television program (on Discovery Channel, of course).  The show was about the Mountain X Race, an extreme multi-sport “adventure race” that consists of the following stages over a 5 day period.  The Mountain X Race took place in the Alps (France) and consisted of:   Day 1: Foot race [...]

Two A Day (Kind Of)

I feel like I’m officially in triathlon-training mode because I’m starting to tackle two forms of cardio each day!   I started off with a slow and steady 2.0 mile run. I opted to run on the treadmill instead of outside so I could stop if I needed to.  I wasn’t sure how my foot [...]

Office Work

French Toast has returned! French Toast is one of my favorite breakfasts, but I haven’t made it in a long time.   My favorite way to make it is to add ground flax to the egg mixture… flax just adds such a great, nutty flavor, especially when it’s heated up on the griddle. I added [...]

Beach, Gym, and Dinner

I had a lovely day with the sister-in-law (Sophie).  We went to the beach, worked out, and made a lovely dinner for the Husband and Harry.   The beach was a little cold, but it was nice to be outside. While we hung out, we flipped through this book, called Core Performance Women:  Burn Fat [...]

Win a Garmin 305!

I brought out my precious England Instant Coffee (it’s so much better than our Instant!) for some delicious Double Shot Oatmeal! I mixed 1 tablespoon of Instant Coffee into my regular banana oatmeal.  If you love coffee-flavored things, you’ll LOVE Double Shot Oatmeal! My oatmeal contained:   1/2 cup oatmeal 1/2 cup rice milk 1/2 [...]

Sunday Night Out

As I wrote earlier, I worked all morning so that I could go out tonight… party like it’s Friday!  :)   Before leaving, I had Pumpkin Yogurt and granola.  I’m sure you can visualize since I eat it every day!  Then, I met Meghann at Orlando Brewing Company for Brews and Barks night. Meghann and [...]

Birthday Boy

I’m off to celebrate James’s 4th Birthday!  He’s a big boy now! In fact, he’s such a big boy that Meghann and I are taking him to the bar with us.  Yes, really! :)  The Orlando Brewing Company, Orlando’s organic brewer, allows pets in the tasting room on Sunday afternoons.  Meghann is bringing her pup, [...]
