I’m on a roll!  I went to the gym, and I actually ate a sit-down dinner… on weekday!  My schedule is so crazy right now, and it was nice to relax.  🙂

Around 1:30, I grabbed a bowl of yogurt and cereal.  Mmmm.

I was "released" from my full-time job at 2:30 and immediately got ready for the gym.  I was so excited to do some cardio on a weekday!

The elliptical was screaming my name! 🙂

  • Duration: 30 minutes
  • Calories Burned: 160

I’m glad I did my strength training routine in the morning!  I was in and out of the gym in no time.

After showering and whatnot, I got ready for my NEXT job and fixed dinner.

Twas a delicious vegetarian meal!

I had brown rice, black beans, and broc.  This kept me super full all through most of work!  🙂

This snack bag provided me with a much-needed boost around 8 PM.

The mix included Kashi Heart to Heart, cashews, and a plum

Time for bed!  This girl is sleepy!

Looks fab! Black beans, brown rice, and veggies go so well together. 🙂 And I like to see someone use Kashi H2H as much as I do.

I have decided that you totally need to buy Eat Drink & Be Vegan. I had basically what you had tonight (beans, rice, veggies) in the most delicious veggie burger ever. Your husband will like the recipes too! And I'm not getting paid to say this…but I do wish I was.

    PS I feel fat.

PPS No, I don't. And I know, that's not funny.

That dinner looks delicious! I love black beans, they are up there with oatmeal on my list of things to eat when I want to stay full for awhile 🙂
These hours must be kicking your butt. How much longer til your husband graduates?

I’m so impressed with all the work you’re doing, yet you still manage to squeeze in exercise where you can. Just goes to show that you can make time for a healthy lifestyle no matter how much you work.

pamela – please dont be mad but i feel like i had to delete your comment. i’m not saying i disagree with you, but i just have a general policy where i do not allow comments about other bloggers on my blog. i kind of feel like it’s talking behind someone’s back and it just makes me uncomfortable. i do not think your comment was a mean one, however, if you really feel like that i urge you to tell that blogger directly. i hope you understand. i think your heart was in the right place, it’s just a serious issue, obviously.

sarah – i have eat drink and be vegan! i’m going to pull it off the shelf later.

    kelly – another 3 semesters!

I love black beans and rice! I actually had that for dinner on Monday night, haha. Hang in there with your work situation, I’m sure it will pay off in the end 😉

Did you add any spices to your beans and rice? Seems like it would be too bland on their own.

  • Caitlin at Healthy Tipping Point May 21, 2009, 9:12 am

nope it was plain. i like it plain 🙂
