Breakfast on My Day Off!!!

 

I LOVE my 4/10 work schedule (Monday through Thursday — 10 hour days; Friday — FREE).  It’s so great to have today off.

 

I slept in late (7:30!!) and then made a leisurely breakfast, which I entered up eating in my bed while watching the news.

I made Coconut Encrusted French Toast.  Unsweetened coconut is such a great addition to French Toast — I just sprinkle it onto the toast after I dredge it through the egg mixture, and then grill it like normal.

Plus maple syrup for dipping and strawberries.

🙂 This breakfast made me happy!

    I love the idea of dredging in coconut – yum!

    I just got my name changed on my driver’s license recently. The first woman I spoke to told me, “Well, you certainly took the plunge early!” WTF? Who says things like that? I’m 23 but I’m guessing she thought I was younger. Then the next woman I spoke to tried to tell me that my marriage certificate wasn’t an original and I couldn’t change my middle name. Eventually it all worked out in the end – hopefully it will go more smoothly for you!

    Hi!

    I actually had a question for you regarding Calorie Counting…even though it doesn’t really go with todays posting!

    I have that last 10 pounds to lose and have tried everything–I exercise 5x a week and eat really healthy–and finally realized it must be the amount of calories I am taking in.

    I just signed up for “The Daily Plate” (similar to Calorie King) and I noticed that each time I log my exercise, my calorie allowance goes up for the day…this makes sense, but should I continue to keep my calorie count at what the “no exercise” allowance is to create a higher deficit, or should I eat at the increased calorie allowance in order to properly fuel my workouts (or find a happy medium)? Hope this makes sense…

    You might be able to change your driver’s license online. Or you could multitask and just run laps around the DMV while “waiting in line.” I”m sure it wouldn’t be the strangest thing to happen in the DMV.

    sally – i get that “youre so young” all the time. hello, i’m 2 months shy of 25! maybe that’s “young” but not “so young”! LOL

    c – i dont know how the daily plate works exactly, but here’s my guess on why your calorie needs go up.

    there is a certain number of calories you need to intake to maintain your weight without exercise. for me, it’s prob 1600 a day. but since i work out so much, its more like at least 1800 to 2200 a day. (because i’m burning more calories, so i need to eat more to stay at the same weight). so the daily plate add calories to your total daily target when you exercise because it is accomodating the calories you’re burning.

    these numbers dont work for everyone, but im going to use them as an example. you need to figure out what your personal base calorie intake should before exercise.

    let’s say i need 1800 a day to maintain my weight without exercise, but i want to lose weight. 1 pound of fat is equal to 3,500 calories. so, to lose a pound in 1 week, i need to either reduce your intake by 500 calories a day OR reduce my intake by 250 calories a day AND burn 250 calories through exercise (because -500 * 7 days in a week = 3500). thus, i can either (1) eat 1300 calories and not exercise or (2) eat 1550 calories a day and do some exercise. one of the reasons why a diet + exercise program is the most effective is because its really difficult to go through life only eating 1300 calories!

    now, let’s say i need 1800 calories to maintain my weight but i DON’T want to lose any weight (like me now). if i went on a run and bruned 500 calories, i would need to make up those calories through food or i would be creating a calorie deficit (and thus lose weight). so i would eat 2300 calories on that day.

    does that make sense?

    so, perhaps your daily plate is set to “maintain” calories, or it’s giving you an extra 100 calories to munch on if you burned 350 calories. i don’t know what kind of calorie deficit the daily plate is set up with.

    but, the point is, 1 pound a week is safe and maintainable, so try to intake 250 calories less and burn 250 calories through exercise. and the stubborn pounds should melt away!

    i hope that makes sense!
