Baked Taco Shell and Movie Night

Evening! Well, I survived my first day back in the office. ;) It helped to have these little faces around again:

Getting back into my routine of mid-afternoon snacks (as opposed to three ginormous meals!) felt strange.

 

I ate a JamFrakas bar (a free sample from a few months ago… still yucky) and a few pickles around 1:30.

Around 4:30, I ate my FAVORITE Grape Nuts + yogurt combo!  And a few blackberries.  Lordy, lord — I missed this snack.

After work, I went on a glorious, glorious run!  It felt great to be back on my usual route. Yippppe!  I threw in some speedwork on the 3rd mile, doing that mile in 8:30.

 

  • Duration: 47 minutes (5 miles)
  • Average Heart Rate: 169 bpm
  • Maximum Heart Rate: 198 bpm
  • Calories Burned:  445

 

Dinner – Turkey Burrito in a Baked Shell

 

Another fun way to use La Tortilla Factory Smart & Delicious Soft Wraps (only 100 calories each and no trans fat!)…. a baked taco shell!

I made a yummy burrito with ground turkey, chopped onions, chopped red peppers, bella mushrooms, and taco seasonings.

I put the wrap in a small casserole dish, folding up the sides, and baked it at 350 for 15 minutes.  I broiled it at 500 for 3 more minutes to crisp it up.  Yum!

 

The taco went on top of a little bed of fresh spinach.

"The Huz," Meghann, and I are watching a movie now — time to pay attention!

    Hey girl- love those pupppppers! Give them a hug for me! I love baking taco shells- so yummy. Why do they ever fry them? What movie did you guys watch? We watched my best friends girl and I loved it!

    Is that a guinea pig?! I’ve never baked a taco shell before, but I’ve had a recipe for fish tacos on my desktop FOREVER that I’ve got to try.

    Are you a mind reader? I just put those La Tortilla wraps into the fridge to thaw after freezing them for months – tonight. I also just bought ground turkey for the first time in ages – tonight. And it just so happens that your dinner looks fantastic…TONIGHT! I’m definitely going to have to try the baked shell sometime this week!

    and love the taco bowl…i used to make those all the time when i was in college…until i told my mom i was using a pyrex bowl and she screamed at me that it could have exploded in the oven…but it never did, so i didn’t care. hahaha!

    Glad you are settling back into your normal routine. Vacay is always nice but there is something so good about normal routine, too.
