I have been baking all morning, and I’m LOVING it! I made tons of lovely little gingerbread men for gifts.
I used a Martha Stewart recipe for both the gingerbread cookies and the Royal Icing.
The icing was amazing. It was thicker than my favorite cupcake icing recipe, and it dried hard.
Do you know how hard it was not to shove that icing straight into my mouth!?
I basically made myself a little army of gingerbread men — over 60 cookies in total!
The trick is you have to let the dough freeze for about 30 minutes. It also helps to stick the roller and the cookie sheets in the freezer, too.
Once the men are on the cookie sheet, place it back in the fridge for another 15 minutes before baking (yes, it’s a long process!).
Once everyone was iced and cool, I package the men into little plastic bags.
I also made Stars and Christmas Trees.
I ended up eating one gingerbread man, one star, and LOADS of raw batter!
While cooking, I snacked on Honey Bunches of Oats cereal….
And afterwards, I had a light lunch of salad and a piece of WW bread with cheddar cheese.
I had a lighter lunch because honestly…. I feel like I got my fair share of gingerbread-related calories this AM!
It was fun to do a baking spree. I love that recipe and will definitely use it again next year!

twins once again…. i also baked gingerbread men… actually, they ended up being gingerbread leaves because those were the only cookie cutters i had. only i haven’t eaten any yet… i was saving them for later indulgences.

I really enjoyed reading the story of your DQ. I can’t imagine how difficult and scary your first open water swim was! I would totally freak out. I don’t even like running in certain places that look like “alligator territory” when I am in FL!

anon – i use a piping bag with a piping tip, but you can always just put the icing in a ziploc bag and cut a tiny tip off one of the corners. the royal icing recipe i used was so dense and thick that i broke FOUR piping bags while making the cookies!!
