Good morning!  I hope you have a FUN shopping day planned; I’m working a 9 hour shift at the doggie kennel. :)   I’m actually working today, Saturday, and Sunday at the kennel.  So, I’m not really on a Thanksgiving vacay.  But at least I’m makin’ money for the wedding!

 

I’m leaving for work before sunrise, so I made my breakfast last night and simply reheated it.  If you’re wondering what to do with all those leftovers, my suggestion is…. make a quiche!  Or lots of mini quiches. 🙂

 

Thanksgiving Leftovers Egg White Mini Quiches

These little quiches contain leftover green bean casserole and leftover turkey! Gobble, gobble!

 

Ingredients:

 

  • 4 egg whites
  • 2 tablespoons sharp cheddar cheese
  • 1/4 cup leftover green bean casserole
  • 1 small slice chopped white turkey (a little less than 1/4 cup)
  • Pepper to taste

Preparation:

 

  • Mix all ingredients.
  • Pour into three greased cupcake tins.
  • Bake at 350 for 35 minutes.
  • Enjoy!

 

On the side, I had two leftover rolls from Thanksgiving dinner.

Mid-Morning Snacks

 

So, I’ve been working from home for a year and a half, and I’m kind of nervous about being away from my kitchen while at work — what if I’m hungry and need an extra snack? What if I’m craving something else? Ahh!  I totally forgot what it’s like to pack snacks and lunch.  In the end, I packed a bar….

Which I’m hoping will hold me over until my lunch break, when I’m going to RUSH home, let out MY dogs, and eat some food.  This job is manual labor + loads of dog walking, so I hope I don’t get TOO hungry.

    Your Thanksgiving looks awesome! My family was always really casual with it too and I’ve kept it the same with hubs and I. Usually we’re eating in our jammies. 😀

    I love your family’s casual approach, too. My fam is pretty laid back about things like this, too.

    Grandma’s recipe for rolls looks wonderful. I for sure would have eaten 18!!!!

    I know, packing snacks and meals can be so overwhelming at first, it just takes practice to figure out what packs the best and keeps you energized the best.

    Great idea on the quiche!

    I know what you mean about having to pack snacks and lunches…when I started my full time job I always underpacked my lunch and wound up starving mid afternoon- now I know to ALWAYS have lots of food and to bring an emergency stash of almonds! I have one in my bag and car at all times. lol

    Your so creative!!! I won’t have any leftovers, and when I get home I plan on cleaning out everything in the fridge and pantry!!! Have fun at the kennel!
