Whole Wheat Almond Pancakes

Whenever I have an crazy day in my future, I try to wake up a little early and make myself and Future Husband a "special breakfast."  It just makes the whole day go better!

 

My favorite pancake mix in the whole world is Hodgson Mill InstaBake, but we were all out! So, I tried my hand at a WW pancake recipe.  These pancakes are more dense than fluffy and packed with almonds for a little extra crunch.

Whole Wheat Almond Pancakes

 

Ingredients (3 servings):

 

  • 1 cup + 1/4 cup WW flour
  • 1 tablespoon brown sugar
  • 2 teaspoons baking powder
  • 1/2 tablespoon cinnamon
  • 1 cup milk
  • 1 tablespoon vegetable oil
  • 20 almonds, chopped thin
  • Sprinkle of salt

Preparation:

 

  • Mix all ingredients in bowl.
  • Pour 1/8 cup of batter onto griddle.
  • Cook and flip once.
  • Serve and enjoy!

I served my pancakes with a sliced banana.  Its always fun to stack a silver dollar pancake and a banana slice on the same fork, and then dip it all into real maple syrup! 🙂

 

And, of course, I had a coffee.

Today is going to be craaaaaazy! I hate working under deadline pressure.  I try to remind myself that it ALWAYS gets done, but when you’re beginning a project, the task can seem so insurmountable.

 

After work, I get to run my 1st tempo run! I’m excited to try a new training style. 🙂

 

What special treats do you give yourself when you’re had a bad day?  In addition to special breakfasts, I also like to indulge in bad reality television. 🙂

    Those look yummy! Better than the mix?
    When I’ve had a bad day, I like frozen yogurt or laying on the couch. 🙂 I never do that!

    Ooo, pancakes! Maybe I’ll veganize that recipe with almond milk for double the almondness.

    Hang in there with work! I have a paper due tomarrow, and its really overwhelming, but when I just take the time to write down everything that needs to get done, it makes it seem like less work.

    Guilty pleasure TV? Hell yes!
    I also love listening to old pop music (kind of random, but it help!). I know you and I both love Ms. Britney! Listening to Womanizer now. 🙂

    I treat my self to the largest glass of wine I can find – I have a wine glass that holds about half a bottle – LOL – that way – I can say I only had “ONE” glass 🙂

    Whenever I know I’m going to have a crazy day, I just try to make sure everything is planned and packed – the more I have to do in that day, the worse off I am, so I like to be ready to go. Then when I get home, I just unwind and curl up under blankets 🙂

    Anon – I use 1 tablespoon half and half and 3 drops of Vanilla Stevia. 🙂

    Usually when I have a bad day I dont even want treats cause it makes me feel worse ( If we are talking about food treats haha) but rather I like to allow myself to relax and pray!

    Enjoy your tempo run! It always a challenge for me to pace myself correctly for the tempos, but a fun one.

    If I've had a bad day, I usually don't cook (allow myself to eat pb&j or a bowl of oatmeal for supper) and change into my comfiest, most ragged clothes.

    If I’ve had a bad day I usually treat myself to Starbuck’s. I try to keep that particular coffee house at arm’s length on a regular basis for that purpose!
