carb loading

forget spaghetti… my pre-race dinner tradition is thai food. there’s a great thai place up the road called royal thai, and their food is EXCELLENT. i took our out of town guest and my future brother in law there tonight.
i had chicken pad thai with extra veggies. it was full of noodles, spicy peanuts, cabbage, carrots, brock, onions… so many yummy things, i ate the whole plate! does anyone have a good recipe for pad thai? i’d love to create this at home.

i order all my thai food “thai level” spicy… aka an 11 out of 10! i love the combination of the peanuts and noodles. i also had a spring roll and some cucumber salad.

Snack 3:30 PM

two wasa crackers, cheddar cheese, and two slices of turkey deli meat.

and a piece of dove chocolate 🙂


well, i’m actually going to go out tonight, but i’m going to keep the beer to a minimum and try to get to bed earlier… race is at 7:40 AM tomorrow!
