black bean burger patties

in All Posts
Future Hus and I put in some serious cleaning time, and it feels so good to have a clean home. This was not a weekly clean; this was the deep clean kind you do (or should do) every 6 months or so. We wiped down the inside of all the cabinets, scrubbed the inside of the fridge, cleaned all the floors, scrubbed the showers… and now every surface sparkles! Yayyy!
But first, I was so tired after my morning run and post that I fell asleep on the couch for an hour and a half! Unheard of! I definitely needed to sleep. James Bond curled up next to me and we just crashed out. Its so nice to snooze with a furry, warm doggie. 🙂
After I woke up, I made lunch… a Black Bean Burger Patty!

Ingredients:

  • 1/2 cup canned black beans
  • 1 tablespoon salsa
  • 1/2 tablespoon mustard
  • 1 tablespoon WW flour
  • Pepper to taste

Preparation:

  • Mix ingredients together until beans are mostly mashed.
  • Form into ball.
  • Place in heated pan and smush down ball a little with a spatula.
  • Cook on stovetop (Medium High) until browned on each side.
  • Enjoy!

I had my patty on 1 piece of WW bread with some melt cheddar cheese. On the side, I had steamed broc and a tiny plum. I took a picture of the plum, but my camera ate it… oops!

Snacks

Cleaning out the fridge made me HUNGRY, so I munched on a Chocolate Peppermint Stick Luna Bar. This bar was a-ma-zing. I smelled the peppermint the moment I unwrapped the bar–it just wafted up at me! It smelled like CHRISTMAS!

The bar was 180 grams and had 5 grams of fat, 9 grams of protein, and 5 grams of fiber — pretty decent, nutritionally. But the taste–oh the taste–was soooo good. I felt naughty eating it! I definitely recommend this bar.

Once the cleaning spree was over (it lasted 3.5 hours), I had Grape Nuts + plain nonfat yogurt + 1/2 a banana. Delicious. We’re going to have a late dinner and then go see Pineapple Express, so I needed something to hold me over.

I’m off to give James Bond a walk and take a shower! I hope you all have a nice evening. If you have tomorrow off, enjoy your “Saturday”! 🙂

so. i have about 17 different “homemade bean burger” recipes on my fridge right now, held up by one of those clippy magnets. i’m going to go ahead and let you guess if i’ve even ATTEMPTED to make any of them. they always seems so complicated and have 12384723984 different ingredients in them. Ingredients which i usually don’t have in the house.

i assume that homemade bean burgers are a lot like oatmeal mix ins, or stir fry where you can just throw ANYTHING in and as long as you contain a few scientific properties, it works. Yet I’m the kind of girl that likes to have the science all worked out in front of her. (there is a reason i was an english major, and it wasnt a crush on Faulkner.)

I am quite certain that TONIGHT i will be attempting THIS VERY recipe for black bean burgers. Mostly because I have a BUNCH of black beans in my freezer, waiting for something to be done with them.

and this recipe seems perfect for this non-chef.

although, i may or may not be the girl who called her mother sophomore year of college, the first weekend in her new apartment asking if I can make burgers on the stove top, or if a grill had to be involved.

yeah. maybe non-chef isn’t quite accurate. perhaps ANTI-chef is more like it 😉

Haha! I’m enjoying the old posts (reading random ones for running motivation) but your writing style has definitely evolved! 😉
